Red Cabbage with Apricots and Balsamic Vinegar

Ingredients:


1 head red cabbage

1 tablespoons butter

2 large white onions

1 large red onion

1 clove garlic

1 bunch coriander

1 cup vegetable/chicken stock

3/4 cup dried apricots

2 tablespoons balsamic vinegar

1 teaspoon allspice

1 teaspoon salt and pepper
 

Preparation / Directions:


Melt the butter into a large pot. Slice the onions (white and red) and garlic, roughly chop the coriander, and add all to the pot. Cook on a medium-high heat until the onions are soft. Slice up the red cabbage, add to the pot and cook for 3-4 minutes. Add the stock, balsamic vinegar, dried apricots, allspice and salt and pepper; then cover and cook on a low heat for forty minutes, checking and stirringly periodically
