Scots Cream Crowdie

Ingredients:


2 cups heavy cream

2/3 cup coarse oatmeal

1/3 cup granulated sugar

1 tablespoons rum

1 1/2 cups fresh wild blackberries
 

Preparation / Directions:


Put the oatmeal in a thick-bottomed saucepan and shake it over the heat until crisp. Beat the cream to a thick froth in a separate bowl and stir in the toasted oatmeal, sugar, rum and fruit. Serve at once. Very rich but scrumptious.
