1 Cup Vegetable oil
1 1/2 Cup Aunt Jemima White Corn Meal
1/2 Cup all-purpose flour
2 tablespoons baking powder
1 teaspoon salt -- optional
3/4 Cup milk
1/2 Cup finely chopped onion
1 large egg -- beaten

Preparation / Directions:

Heat 2" deep oil to 375 degrees. Combine remaining ingredients; mix well. Drop by rounded teaspoonfuls into hot oil, frying a few at a time until golden brown. Drain on paper towels. Gilding the Lily: Yellow cornmeal can be substituted. Chopped roasted red pepper or minced pickled jalapeno peppers can be substituted for some of the onion. Green onions can replace the white onions.
