Brisket With Apricots

1 pound apricots -- dried
4 cups water
2 medium Onions -- minced
3 pounds brisket
2 tablespoons vegetable or canola oil
1 1/2 teaspoons salt
1 tablespoon lemon juice
2 tablespoons brown sugar
1 teaspoon cinnamon -- ground

Preparation / Directions:

Wash the apricots and soak in the water for 1 hour. Brown the onions and meat in the oil. Add the salt, lemon juice, sugar, cinnamon and undrained apricots. Cover and cook over low heat 2 1/2 hours or until meat is tender.
