Portuguese Bakes Beans (Feifoes Assados)

Ingredients:

2 teaspoons olive oil
2 medium Onions -- chopped
2 cloves garlic -- minced
4 cups cooked white kidney beans -- or red kidney beans
1 cup chicken broth
2 tablespoons tomato paste
2 teaspoons hot pepper sauce
1 teaspoon hot paprika
1/2 teaspoon ground cinnamon
3 pieces bay leaves
4 slices back bacon -- diced
1 teaspoon salt and freshly ground black pepper
 

Preparation / Directions:

In Dutch oven or skillet, heat oil over medium heat. Cook onions and garlic for 5 minutes or until onion is translucent. Stir in beans, broth, tomato paste, hot pepper sauce, paprika, cinnamon, and bay leaves. Transfer bean mixture to a casserole, or bake in Dutch oven. Sprinkle bacon over beans. Bake in 300 degree oven for 15 minutes or until bacon is cooked. Stir bacon into beans. Season to taste with salt and pepper. Bake for another 20 minutes or until golden brown.
