Mexican Burritos

Ingredients:

1 tortillas mexican pancake -- (tortilla)
1 cup cooked mixed beans
1 cup mixed colour peppers -- sliced
1 clove garlic
1 bunch coriander
1 bunch leeks -- chopped very small
1 bunch mushrooms
1 teaspoon plum tomatoes
1/2 cup salsa sauce
1 Cup sour cream
1 bunch grated cheese
 

Preparation / Directions:

Fry the beans, leeks, peppers and garlic until just soft, adding the mushrooms and tomatoes in the last few minutes. Spoon the mixture into your burrito. Fold over and cover with salsa sauce, the sour cream and the cheese.
