Mexican Burritos

Ingredients:

  1                     mexican pancake -- (tortilla)
  1                cup  cooked mixed beans
  1                cup  mixed colour peppers -- sliced
  1              clove  garlic -- chopped
                        coriander
  1            handful  leeks -- chopped very small
  1            handful  mushrooms
  1                     spoonful plum tomatoes
     1/2           cup  salsa sauce
                        spoonful sour cream
  1            handful  grated cheese
 

Preparation:

Fry the beans, leeks, peppers and garlic until just soft, adding the mushrooms and tomatoes in the last few minutes. Spoon the mixture into your burrito. Fold over and cover with salsa sauce, the sour cream and the cheese.
