Marinated Black-Eyed Peas

Ingredients:


1/2 cup olive oil

1/4 cup red wine vinegar

1 teaspoon salt

1/4 teaspoon pepper

1 clove garlic -- crushed

1 cup celery -- chopped

1/2 cup red onion -- chopped

1/2 cup green bell pepper -- chopped

1 medium jalapeno pepper -- chopped

30 ounces black-eyed peas drained
 

Preparation / Directions:


Mix the oil, vinegar, salt, pepper, and garlic then pour the mixture over the remaining ingredients in a large bowl. Cover and refrigerate at least 2 hours but no longer than 24 hours, stirring occasionally.
