Italian Bean Soup

Ingredients:


2 cups chicken broth

1 rib celery

1 can lima beans

1 can white beans

1 tablespoon olive oil

2 teaspoons dried basil

1 medium Onion

32 ounces whole tomatoes

1 teaspoon salt and black pepper

1/2 cup parmesan cheese
 

Preparation / Directions:


Bring broth to simmer over medium heat. Add celery, lima and white beans to broth. In saute pan heat oil and cook onion 3 minutes until soft. Stir in basil. Add onion mixture to bean mixture. Stir in tomatoes. Simmer 5 minutes. Season to taste with salt and pepper. In food processor, puree soup until coarse. Stir in cheese. Serve hot. Approximately 10-12 minutes.
