Chickpea Soup - Crockpot

Ingredients:


1 pound dried chickpeas

3 quarts water

1 piece ham bones

1 dash saffron

3 pieces bay leaves

4 cloves garlic -- minced

2 medium onion -- chopped

2 cups potato -- peeled and diced

2 links cooked spanish sausage -- (chorizo), sliced

3 cups cabbage -- finely chopped

1 teaspoon salt and pepper
 

Preparation / Directions:


Soak chickpeas in water overnight; drain and discard water. Place chickpeas in the slow cooker with stock, ham bone, saffron, bay leaves, garlic and onions. Set cooker on low and cook for 8 hours. Add potatoes, sausage, cabbage, salt and pepper and co o
