Preparation / Directions:
When shopping, look for broad, thick, shiny pods that are plump with.
Wash lima beans. Shell just before cooking. To shell beans, remove thin outer edge of pod with sharp knife or scissors. Slip out beans.To Boil:
Heat 1 inch water (salted, if desired) to boiling. Add beans. Heat to boiling; reduce heat. Boil uncovered 5 minutes. Cover and boil 15 to 20 minutes longer or until tender; drain.To Microwave: Place lima beans and 1/2 cup water in 1-quart microwavable casserole. Cover tightly and microwave on high 16 to 18 minutes, stirring every 6 minutes, until tender.
Let stand covered 1 minute; drain.
