Sweet Potato Croquettes

5 Medium Sweet Potatoes
2 Tablespoons Butter
2 Tablespoons Sugar
1 Teaspoon Lemon Juice
6 medium Marshmallows
2 large egg whites -- slightly beaten
2 Cups Corn Flakes -- crushed

Preparation / Directions:

Cook sweet potatoes in jackets; peel and mash. Season with sugar, butter and lemon juice. Make croquettes by shaping potatoes around marshmallows. Chill one hour. Dip into egg whites, roll in corn flakes and fry in deep hot fat (375) until golden brown. Drain on paper towels and serve immediately.
