2 cups cucumber -- peeled and seeded
1 tablespoon fresh lemon or lime juice
1 tablespoon chopped fresh chives
1 teaspoon freshly ground black pepper

Preparation / Directions:

Cut the cucumber into julienned strips. Coat a non-stick skillet with cooking spray. Heat until hot. Add juice, chives, and cucumber. Toss well. Reduce heat, cover, and cook over very low flame for 1 or 2 minutes until hot and crisp-tender. Sprinkle with pepper. Makes 2 (1-cup)= servings.
