Ratatouille

Ingredients:


3/4 cup wish-bone italian dressing

1 medium onion -- chopped

1 medium eggplant -- peeled and cut into 1 inch cubes

2 medium zucchini -- cut into 1/2-inch slices

3 medium green peppers -- cut into strips

4 medium tomatoes -- peeled and cut into wedges

1 can tomato sauce -- (8 oz.)

1/2 teaspoon basil

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


In large saucepan, heat Wish-Bone Italian Dressing and cook onion until tender; add remaining ingredients. Simmer covered, stirring occasionally, 30 minutes or until vegetables are tender. Serve hot or cold.
