Rapid Ratatouille

Ingredients:


5 cups zucchini -- sliced

1 1/2 cups onions -- vertially sliced

1 cup green bell pepper -- strips

1 teaspoon dried italian seasonings

28 ounces tomatoes -- canned, drained and chopped

2 tablespoons parmesan cheese
 

Preparation / Directions:


Combine all except cheese in a shallow 2 qt baking dish; cover and microwave at High 14 minutes, stirring after 7 minutes. Serve with a small sprinking of cheese if desired. 1 cup equal 1 serving.
