1/2 cup yellow cornmeal
2/3 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1 cup milk
1 tablespoon oil
4 medium sweet red onion
1 Cup peanut oil

Preparation / Directions:

Combine dry ingredients beat together egg, milk, and 1 tablespoon oil add dry ingredients, beat until smooth, and cover separate onions into rings heat oil to 375 degrees dip rings into batter, allow excess to drip off fry in oil, a few at a time, until golden on both sides drain well on paper towels keep warm serve hot
