Preparation / Directions:
Wash sweet potatoes. Pierce with a fork Place in oven. Microwave at high
(100%) until tender, 10 to 12 minutes. Let stand 5 minutes.
Combine brown sugar, butter and orange juice in a small bowl. Microwave a=
high (100%) until butter melts, 1 to 2 minutes.
Peel and slice sweet potatoes. Place in a 2 quart casserole. Pour brown
sugar mixture over potatoes. Microwave at high (100%) until potatoes are
heated, 3 to 4 minutes, stirring after half the cooking time.
Makes 6 to 8 servings.
