Preparation / Directions:
Cut up your potatoes for hash browns(cut into small cubes (about half inch square) or shred with large holed shredder), and scald in boiling water 1 minute. Beware, when potatoes are cut small like this, they will scald quickly. Drain well, and place them on an absorbent, clean dish towel or on paper towels. Gently press ALL the remaining water out of the potatoes. Be absolutely certain you have removed as much water as possible. Place potatoes onto cookie sheets, and flash freeze until just frozen. Remove cookie sheets from freezer, and cut potatoes into 3 x 4 inch squares. Package potatoes into zip baggies or foil, label and freeze.
