Preparation / Directions:
*substitute: 1 cn (23 ounces) sweet potatoes Or yams, drained and cut Into 1/2-inch slices.
Prepare and cook sweet potatoes as directed. Slip off skins. Cut into 1/2-inch slices. Heat remaining ingredients in 10-inch skillet over medium heat, stirring constantly, until smooth and bubbly. Add sweet potatoes.
Stir gently until glazed and hot. Sweet potatoes and yams are both varieties of sweet potatoes, and the two can be used interchangeably. Yams, very popular in the South, have a deep orange color and are somewhat moister when cooked. Sometimes called Jersey Sweets, sweet potatoes are creamy yellow, and slightly drier than yams.
