Brocolli Soup

Ingredients:

3 tablespoons butter or margarine
1/4 cup chopped onion
1/4 cup flour
1 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon thyme -- crushed
1/8 teaspoon pepper
1 3/4 cups milk
1 can chicken broth -- 14 1/2 oz
2 cans chicken -- 6 3/4 oz
2 cups frozen mixed brocoli -- cauliflower, carrots
 

Preparation / Directions:

Melt butter in a 3 quart saucepan. Add onion and cook until tender. Stir in flour, mustard, salt, thyme and pepper, cooking until smooth. Add milk and chicken broth, cooking and stirring over a low flame until thickened. Stir in chicken and mixed vegetables and cook for 4 to 6 minutes or until mixture is heated through.
