Beer Batter Onion Rings

3 medium sweet onion
1 Cup corn oil
1 cup flour
1 teaspoon yellow cornmeal
1/2 cup milk
1 teaspoon beer
1/2 teaspoon salt

Preparation / Directions:

separate onions into rings heat oil to 370 degrees combine flour and cornmeal, set aside stir together milk and beer dip onions into milk mixture dredge in flour mixture to coat evenly dip into milk mixture, allowing excess to drip off then flour mixture again place onto waxed paper chill for 10 minutes to set coating fry @ 370 degrees for 3-5 minutes per side, until golden drain on a cooling rack and blot with paper towels keep warm serve warm
