Orzo Tuna Tomatoes

Ingredients:


1/3 cup orzo

6 1/2 ounces canned solid white tuna in water -- drained, flaked

1/2 cup plain nonfat yogurt

1/2 cup red bell pepper -- diced

1/3 cup blanched slivered almonds -- toasted

1/4 cup celery -- sliced

3 tablespoons parsley -- chopped

1 teaspoon lemon juice

1/4 teaspoon dried tarragon

4 medium tomato
 

Preparation / Directions:


Cook pasta according to package directions; drain and cool. Mix together remaining ingredients, except tomatoes. Cut tomatoes in half; squeeze lightly to remove seeds. Top tomato halves with salad mixture to serve. Note: If orzo is unavailable, melon seed pasta may be substituted.
