Tuna Patties

Ingredients:


2 cans tuna drained -- finely flaked

1 cup soft bread crumbs -- about 3 slices

1/2 cup chopped celery

1/4 cup chopped green onion

3 large egg -- well beaten

4 tablespoons shortening

-----cucumber sauce-----

1/2 cup sour cream

1/2 large lemon -- juice of

1 clove garlic -- fine minced

1 small cucumber -- peeled and chopped

-----sour cream sauce-----

2 tablespoons chopped green onion

1 tablespoon butter

1/2 cup sour cream

1 tablespoon lemon juice

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Mix ingredients, except shortening, together and form into patties. Melt shortening in heavy skillet and sauté the patties until golden brown. Drain on absorbent paper. Serve hot with sauce or chill for several hours or overnight and serve cold with Cucumber sauce. Cucumber sauce: Mix all ingredients well and chill. Sour Cream Sauce: In small saucepan sauté onion in butter. Lower heat and stir in sour cream and lemon juice. Salt and pepper to taste. Serve over hot patties.
