Tuna Pasta

Ingredients:


1 tablespoons olive oil

1 cup chopped onion

1/4 cup chopped celery

1 teaspoon garlic -- minced

28 ounces canned tomatoes -- chopped and drained reserve juice

13 ounces canned tuna

1 teaspoon dried oregano

1/8 teaspoon red pepper flakes -- optional

1/8 teaspoon salt -- to taste

1/8 teaspoon black pepper -- to taste

1 pound pasta

1/4 cup fresh parsley -- chopped

1 cup grated Parmesan cheese
 

Preparation / Directions:


1. Heat the olive oil in a med-sized saucepan that has a lid. Add the onion, celery, and garlic, and cook them gently, stirring them often, for several minutes until the onion wilts. Take care not to burn the garlic. 2. Add the crushed tomatoes and water or the chopped tomatoes with their liquid, and bring the ingredients to a simmer. 3. Drain the tuna, discarding the liquid. With a fork, break the tuna into small chunks, and add it to the tomato sauce along with the oregano, red pepper flakes, salt, and pepper. Cover the pan, and simmer the sauce for 10 minutes. 4.While the sauce simmers, bring a large pot of water to a boil. Add the pasta, and cook it al dente according to the package directions. Drain the pasta, and place it in a large bowl. 5.Add the sauce and the parsley to the pasta, and toss the ingredients to combine them well. Serve the pasta with the parmesan on the side.
