Classic Tuna Sub

Ingredients:


2 large hard boiled eggs

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon salt and black pepper

2 tablespoons red wine vinegar

1 rib celery

1 can tuna

6 fillets anchovy fillets

1 tablespoons fresh basil

1/4 cup black olives

1 medium ripe tomato

1 bunch romaine lettuce leaves

1 package sandwich bread
 

Preparation / Directions:


Pour oil into bowl. Add oregano, salt, black pepper and vinegar. Mix well. Mix in hard cooked eggs, celery, tuna, anchovies, basil and olives. Cut rolls in half and place on plate. Put some tuna vinaigrette mixture on each top half. On other half of roll place slice of tomato and lettuce leaves. Slice hard boiled eggs on top of lettuce. Pour remaining tuna-vinaigrette mixture over each bottom half of bread. Cover with top half of rolls. Serve at once. Approximately 6-8 minutes.
