Mocha Truffles

Ingredients:


2/3 cup butter

1 large egg yolk

6 ounces semisweet chocolate -- melted and cooled

1 teaspoon instant coffee

1 tablespoons rum -- (optional)

1 cup chocolate wafer cookies -- crumbled
 

Preparation / Directions:


1. Cream butter until smooth. Blend in egg yolk and sugar. 2. Add chocolate, coffee and rum (if using); mix well. 3. Chill until firm enough to handle (about 3-4 hours). 4. Drop mixture into wafer crumbs, and roll to coat all sides and form a ball. 5. Drizzle with additional chocolate if desired.
