Ingredients:


1 pint cherry tomatoes

1 teaspoon salt

1/3 cup fresh basil leaves

1 large egg

1 large egg yolk

1/4 teaspoon salt

1 teaspoon fresh lemon juice

1/2 cup corn oil

1/2 cup olive oil
 

Preparation / Directions:


halve tomatoes, sprinkle with salt invert and allow to drain for 15 minutes rinse lightly, allow to drain combine basil leaves, egg, egg yolk, salt, and lemon juice in a food processor process to blend well with motor running, add oils in a thin steady stream process until thickened arrange tomatoes upright onto a chilled platter spoon basil mayonnaise onto tomato halves serve chilled
