Portobello Mushroom Tart

Ingredients:


---FILLING---

8 large portobello mushrooms -- cleaned and thinly sliced

5 Small shallots -- thinly sliced

2 teaspoons garlic -- minced

10 pieces sweet basil leaves -- sliced

1 ounce olive oil

2 ounces white wine

1/4 teaspoon salt and pepper -- to taste

1 crust pie shell -- parbaked 9 inch

3/4 cup parmesan cheese -- shredded

5 medium roma tomatoes -- peeled and sliced
 

Preparation / Directions:


In a saut‚ pan, saut‚ the shallots in olive oil for 1 1/2 minutes. Add the mushrooms and saut‚ for about one minute, adding more oil if necessary. Add the garlic, saut‚ for 30 seconds and then add the white wine. Cook for another minute. Fold in the sweet basil; season with salt and pepper to taste; remove and let cool.
