Stir-Fried Beef With Chipotle Chilies

Ingredients:


1 pound skirt steak

1/4 Cup worcestershire sauce

1/2 cup tabasco sauce

1/2 cup vegetable oil

1 medium carrot -- julienned

16 medium snow peas -- julienned

1/4 small red cabbage -- shredded

1 medium zucchini -- coarsely chopped

4 medium chipoltle chilies -- finely ground or minced

1/4 pound bean sprouts
 

Preparation / Directions:


Trim meat of any fat and slice with the grain into finger-sized pieces. Mix Worcestershire sauce, Tabasco, and vegetable oil in a bowl. Add the sliced steak, cover, and refrigerate overnight. Heat the peanut oil in a large skillet or wok over high heat. Add the carrot, snow peas, cabbage and zucchini and cook, stirring constantly, for about 2 minutes. Add the ground chilies and stir. Add the marinated steak pieces and continue stir-frying until just before meat reaches desired doneness. Add the bean sprouts, finish cooking and serve. Preparation time: 15 minutes, set overnight, plus 15 minutes
