Garbanzo Bean Stew

Ingredients:


4 cups garbanzo beans -- cooked, drained*

1 can diced tomato

1/2 teaspoon garlic dried minced

1/4 teaspoon fennel seed

1/4 teaspoon dried thyme
 

Preparation / Directions:


1. Put all ingredients into a slow cooker. 2. Mix. 3. Turn slow cooker on high for about 1 hour. 4. Turn slow cooker on low for 2 - 3 hours. Variations: use white beans, use stewed tomatoes Serve with a salad; serve over rice On non-fast days: serve with chicken; serve as a burrito with cheese; turn leftovers into soup by adding chicken broth, diced leftover chicken and fresh spinach Serving Ideas : double-freezes well
