Chicken And Barley Stew

Ingredients:


1 cup Pearl Barley

1/2 cup Quinoa

1 medium Skinless Boneless Chicken Breast -- Bite-Sized pieces

2 medium Carrots -- Chopped

2 medium Celery -- Ribs

1/2 large Purple Onions -- Chopped

2 cloves Garlic

1 teaspoon Sage

1 teaspoon Thyme

1 teaspoon Poultry Seasoning

20 ounces Nonfat Chicken Broth

2 Cup Water -- To Cover And Additional As Need
 

Preparation / Directions:


I browned the chicken in a frying pan sprayed with nonstick cooking spray. Put it and all the other ingredients into the crockpot. I put enough water in to cover everything and checked it every few hours so that it would not cook dry. Cooked it on low about 7 hrs. It was excellent!!
