Ingredients:


1 cup flour

1/8 teaspoon salt

1/2 cup milk

1/2 cup water

1/3 cup unsalted butter

5 large egg
 

Preparation / Directions:


sift together flour and salt combine milk, water, and butter in a heavy saucepan, over a medium flame bring to a boil, be sure butter is melted reduce heat to low add dry ingredients, all at once heat and stir until paste comes away from sides of pan remove from heat and cool for 3-4 minutes transfer to a mixer beat in eggs, one at a time if mixture looks dry, beat in an additional egg spoon into a pastry bag fitted with tip as follows 1/2-inch mini puffsmedium round tip 1-1/2" gougere puffs1/4" round or star tip 3" cream or savory puffs1/2" round or star tip pipe onto a parchment-lined baking sheet sprinkle lightly with water bake at 400 degrees for 10 minutes bake at 350 degrees for 20-25 minutes, until lightly browned do not open oven door for first 25 minutes of baking cool on a rack in a draft free place cut tops from medium or large puffs remove webbs with a spoon fill as desired
