Lemon Spinach With Pine Nuts

Ingredients:


20 ounces fresh spinach

2 tablespoons olive oil

1 small onion -- sliced

1 clove garlic

1/4 cup pine nuts -- toasted

2 tablespoons currants or raisins

1 tablespoon lemon juice

1/4 teaspoon salt and pepper
 

Preparation / Directions:


1. Trim spinach and rinse under water; shake off excess. 2. In a saucepan, cover spinach and cook over medium heat, with just the water that is clinging to the leaves, for about 5 minutes. 3. Drain in a sieve, pressing out moisture. 4. In a skillet heat oil over medium heat, cook onion and garlic until softened. 5. Add spinach, pine nuts, raisins, lemon juice, salt and pepper to taste. 6. Toss gently and heat for 2-3 minutes until heated through.
