Pickled Spinach

Ingredients:


2 cups spinach -- torn

1 cup tomato -- chopped

1/4 cup green pepper -- chopped

1/4 cup vinegar

1/3 cup oil -- vegetable, to 1/2 cup

2 slices bacon -- cooked and crumbled

1 bunch lettuce leaves -- opt.
 

Preparation / Directions:


Combine first 5 ingredients, tossing gently. Chill at least 15 minutes. Sprinkle bacon over top; serve on lettuce leaves, if desired.
