Puree Of Carrot Soup

Ingredients:


2 tablespoons butter

1 medium Onion -- chopped

1 1/2 pounds carrots -- peeled, thinly sliced

1 teaspoon dried thyme

2 cans vegetable broth -- (141/2 ounces each)

1 piece bay leaf

1/4 cup whipping cream
 

Preparation / Directions:


Melt butter in heavy large saucepan over medium-high heat. Add onion and saute until translucent, about 5 minutes. Add carrots and thyme to saucepan and saute until onion is tender, about 5 minutes. Add broth and bay leaf to saucepan. Bring to a boil. Reduce heat and simmer until carrots are very tender, about 20 minutes. Remove bay leaf. Puree soup in blender or processor until smooth. Return to saucepan. Add cream and bring to simmer. Season to taste with salt and pepper. Prep Time: 5 minutes Cook Time: 30 minutes Makes: 4 servings This soup has such a beautiful orange color and wonderful sweet flavor that it's a great as a first coarse or accompanied by a simple salad for a light lunc
