Potato Oyster Soup

Ingredients:


4 large potatoes

1 large onion

4 cans oysters

2 teaspoon butter

2 quarts milk

4 stalks celery chopped
 

Preparation / Directions:


Peel and dice potaoes and onions. Chop celery into thin slices. Put potatoes, onions and celery in cold water in a 4-quart sauce pan. Bring to a boil, and add butter in drops. This keeps it from boiling over. Cook at medium heat about 30 minutes, until potatoes are soft. Drain water, and add enough milk to cover well. Add oysters, salt and pepper to taste. Bring back to a near boil, just hot, and then simmer until serving.
