Tortilla Soup

Ingredients:


1 medium onion chopped

2 tablespoons vegetable oil

2 cloves garlic minced

1 teaspoon cumin

1 teaspoon salt

3/4 teaspoon Worcestershire sauce

3 cans beef broth

3 cans chicken broth

8 ounces tomato sauce

14 ounces diced tomatoes

1 cup chicken cooked diced

1 package Tortilla chip strips

1 cup Monterey Jack or Colby Jack cheese

1 medium Avocado slices
 

Preparation / Directions:


Sauté onion in oil until translucent. Add garlic and seasonings, beef broth, chicken broth, tomato sauce and tomatoes. Bring to a boil. Cover, reduce heat and simmer for 1 hour. Add chicken. Heat through.

To serve: Place a few tortilla chips in a bowl and ladle soup over chips. Garnish with cheese and a slice or two of avocado.
