Chorizo And Bean Soup

Ingredients:


1 tablespoon dried New Mexican chilies -- crushed

1 pound smoked chorizo sausage -- crumbled

1 large onion -- chopped

3 medium carrots -- diced

1 cup celery -- chopped

2 cups cooked kidney beans

2 medium tomatoes -- peeled and diced

1 cup broth from cooked kidney beans

3 cups water

1 teaspoon Worcestershire sauce

1 teaspoon white vinegar

1/2 teaspoon epazote -- optional

1/2 Cup sour cream
 

Preparation / Directions:


Briefly sauté chorizo. Add onion, carrots, and celery and sauté over medium heat for 2 minutes. Combine with remaining ingredients except sour cream and simmer for 30 minutes. Garnish with sour cream and serve.
