Split Pea Soup A La Bread And Roses

Ingredients:


1 cup Dried Split Peas

2 pieces bay leaves

1/2 Teaspoon Dried Thyme

10 Cups Vegetable Stock

3 medium carrots -- In Chunks

3 Medium Sweet Potatoes -- In Chunks

1 Tablespoon Olive Oil

2 medium Onions -- Chopped

1 Stalk Celery -- Sliced

2 Cloves Garlic -- Diced

1 teaspoon salt -- To Taste

2 dashes Pepper -- To Taste

1 dash Marjoram

2 Tablespoons Fresh Parsley -- Chopped
 

Preparation / Directions:


In large pot, combine split peas, bay leaves and vegetable stock; bring to boil. Skim foam and add thyme. Cover and simmer 30 minutes. Add carrots and sweet potatoes and continue to cook until tender, about 30 minutes longer. Stir in marjoram and season to taste with salt and pepper. Simmer 5 minutes longer to blend flavors.
