Pumpkin And Bacon Soup

Ingredients:


5 slices bacon -- thick-sliced, chopped

1 large onion -- chopped

2 pieces chicken bouillon cube -- crumbled

6 cups water

750 grams pumpkin -- chopped

1/2 cup sour cream
 

Preparation / Directions:


Put bacon and onion in a large saucepan, stir over med. heat for about 3 mins or until onion is soft. Add stock cubes, water and pumpkin. Bring to the boil reduce heat, cover, simmer about 15 mins. or until pumpkin is tender. Blend or process until smooth. Add sour cream, reheat without boiling. This soup maybe frozen without the sour cream. Stir the cream in when reheating.
