Ingredients:


1 medium onion, finely chopped

2 tablespoons oil

1/4 Cup peanut butter

1 Cup chicken broth

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Cook onion in oil until soft and golden brown. Lower heat. Blend in peanut butter. Add chicken broth slowly, stirring constantly until smooth. Bring to a boil. Season. Lower heat. Simmer 10 minutes. Garnish with fresh pepper or croutons.
