Old-Fashioned Split-Pea Soup

Ingredients:


1 1/2 Cups quick-cooking split green peas

1 medium ham bone

2/3 Cup coarsely chopped onion

1/4 Cup cut-up carrot

1/2 Cup coarsely chopped celery

2 pieces parsley sprigs -- or 1 Tablespoon dried

1 Clove garlic

1 piece bay leaf -- crumbled

1/2 Teaspoon sugar

1/4 Teaspoon salt

1/8 Teaspoon dried thyme leaves

1/8 Teaspoon pepper

1 Can chicken broth -- (14 oz.)

1 Can vegetable broth -- (14 oz.)

1 cup slivered cooked ham
 

Preparation / Directions:


In 3 1/2 qt. kettle, combine peas, and 1 qt water; bring to boiling. Reduce hat; simmer, covered, 45 minutes. Add more water if necessary. Add ham bone and rest of ingredients, except ham; simmer covered 1 1/2 hours Remove ham bone, and discard Press vegetables and liquid through coarse sieve (I buzz them in the blender) Return to kettle. Add ham; reheat slowly until thoroughly hot.
