Mushroom Soup

Ingredients:


2 Tablespoons olive oil

2 Cloves garlic chopped

1 Pound mushrooms sliced -- sliced

1/2 Teaspoon salt

3 Cups chicken broth

1/2 Teaspoon white pepper

2 Cups fresh tomatoes chopped

1 Teaspoon dried oregano
 

Preparation / Directions:


eat oil in a large saucepan. Saute garlic and mushrooms for 5 minutes. Add remaining ingredients and bring to a boil. Cover and simmer 30 minutes. Serve hot sprinkled with grated parmensan cheese if desired. A simple soup elegant enough for the finest dinner party.
