Italian Bean Soup

Ingredients:


1 1/2 Cups dried lima beans

2 Medium onions (chopped)

2 medium carrots (diced)

2 Medium potatoes (diced)

1 cup canned tomatoes

1 cup canned corn

4 Tablespoons butter
 

Preparation / Directions:


Soak beans. Boil beans till soft. Add vegetables and cook 30 minutes longer. Season with salt and pepper; add butter and simmer 20 minutes longer.
