Ingredients:


1 cup milk

4 large eggs

4 large egg yolks

2 1/2 quarts beef consomm

1 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Scald milk and allow to cool to lukewarm. Beat the eggs and egg yolks until frothy. Stir in the milk and season with salt and pepper. Pour the mixture into a shallow buttered pan, set the pan in hot water, and bake in a preheated 325 degrees F. oven until the custard is firm. Cool and cut into cubes. heat the beef Consomm‚. Place some custard cubes in each soup plate, pour the hot soup over, and serve immediately.
