Classic Gazpacho

Ingredients:


1 medium red onion -- chopped

1 large cucumber -- diced

3 large ripe tomatoes -- chopped

2 cloves garlic

1 cup chicken broth

1 medium carrot -- minced

1/2 medium green bell pepper -- minced

2 cups cold tomato juice

2 teaspoons lemon juice

1 tablespoon olive oil

1 teaspoon worcestershire sauce

1 teaspoon salt and black pepper

1 tablespoons chopped green onions

1 Cup sour cream

1 package croutons
 

Preparation / Directions:


Mix together onion, cucumber, tomatoes, garlic and chicken broth. Stir. Add carrot, bell pepper, tomato juice, lemon juice, olive oil, Worcestershire, salt and pepper. Blend until well mixed. Chill until ready to serve. Serve with chopped green onions and sour cream. Add croutons if you like.
