Broccoli Soup

Ingredients:


3 tablespoons butter or margarine

1/4 cup all-purpose flour

2 cans low-sodium chicken or vegetable broth -- (14 1/12 ounces each)

4 cups broccoli florets

1/4 cup regular or low-fat buttermilk or milk

1 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


In a medium saucepan over medium-high heat, melt butter. Stir in flour. Cook, stirring, for 2 minutes. Mixture will be dry. Slowly whisk in broth. Cook, whisking constantly, until smooth, about 2 minutes. Add broccoli. Bring to a boil, reduce heat and simmer, covered, for 15 minutes or until tender, stirring occasionally. With a spoon, break broccoli into small pieces. Stir in buttermilk and cook 1 minute or until hot. Season with salt and pepper. Prep Time: 8 minutes Cook Time: 20 minutes Makes: 4 servings Although this soup complements almost any entree, I like to serve it with Hot Chicken and Mozzarella Sandwiches.
