Cheese and Rice Souffle

Fluffy egg and cheese dish that is divine! A kid pleaser.
 

Ingredients:


2 tablespoon margarine

3 tablespoon flour

3/4 Cup Milk

2 Cup sharp cheddar cheese, shredded

4 large egg yolks slightly beaten (reserve whites)

1/2 teaspoon salt

1 dash pepper

1 Cup cooked rice

4 large egg whites
 

Preparation / Directions:


1. Preheat oven to 350 degrees 2. Make a white sauce with margarine, flour, and milk 3. Add the cheese. Cook over low heat, stirring constantly, until cheese melts 4. Add yolks, salt, pepper, and rice to the cheese sauce 5. Remove sauce from heat and pour into large bowl 6. Beat egg whites until stiff, but not dry 7. Gently fold whites into cheese mixture. Turni into greased souffle dish. To form crown, with spoon make shallow path about 1" in from edge all the way around. 8. Bake 40 minutes and serve at once
