Ingredients:


3/4 cup peanut oil

1 cup green bell pepper

1 cup mild green chiles

3 cups onion

1/3 cup garlic

8 bunches cilantro

1 teaspoon oregano

1 cup cooked ham

1/4 teaspoon powdered saffron
 

Preparation / Directions:


combine one-third of the peanut oil, bell peppers, chiles, onions, garlic, cilantro, and oregano in a food processor process to finely chop add the ham, pulse to mix well heat remaining peanut oil in a large skillet, over a medium flame sprinkle with powdered saffron or annato seeds add the pureed mixture-mix well heat to a boil, reduce heat, and simmer for 12-15 minutes, stirring often remove from heat, cool cover and chill until needed
