Shrimp Remoulade - 1

Ingredients:


6 tablespoons olive oil

1 tablespoon paprika

4 medium green onions -- chopped

4 tablespoons Creole style mustard

2 tablespoons vinegar

1/2 teaspoon white pepper

1/2 teaspoon salt

2 ribs celery -- chopped fine

1 bunch chopped parsley to taste

1/4 head lettuce -- shredded

2 pounds shrimp -- boiled, cleaned, cold

2 large hard cooked eggs -- chopped -- keep white and yolk separate
 

Preparation / Directions:


Combine all ingredients, except lettuce, eggs and shrimp. Chill. Place shrimp on plate of shredded lettuce. Pour remoulade over shrimp and garnish with eggs.
